WINEMAKER NOTES
Beautiful & deep in color with a purple edge, the nose is broad and open with candied red and black fruit aromas reminiscent of fresh blackberry & huckleberry crumble.  As the nose opens up, it defines and refines itself towards red currents, earthy and lavender notes sprinkled with exotic cardamom.  On the palate, the smooth attack is lush and lends itself to a core of juicy red and black fruit, complementing the dry herbs and violet notes.  The palate shows great weight with coating and refined textures that linger on the elegant and round finish.  

 

VINIFICATION
Our Willamette Valley Pinot Noir is predominantly from the Yamhill-Carlton AVA with certified organic fruit from the Lemelson Vineyards; and from the Eola-Amity Hills AVA with fruit from the old vines of Eola Springs Vineyard.  All the vineyard sources were carefully selected for their stewardship of the land and sound farming practices, as well as showcasing the typical red volcanic soils that the Willamette Valley is so famous for.  The grapes were hand sorted, de-stemmed and started to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermentors.   Gentle punch down twice per day throughout the fermentation helped the soft extraction of the tannins.   Aging occurred in once filled and neutral French oak barrels to preserve the elegance of the wine.   Our Willamette Valley Pinot Noir was estate bottled the week of August 26th, 2013 on fruit days of the biodynamic calendar.

WINEMAKER NOTES
“Pale straw in color with a silver edge, the nose is open and lending with floral notes of acacia, and fresh fruit aromas of white peaches, honeydew melon and a hint of vanilla. The creamy texture and flavor of tangerine are nicely balanced with lean minerality. The finish is long and round, sustained by bright citrus fruits that demand another glass.”

VINIFICATION
The Mad Hatter Chardonnay comes from a small vineyard at the foothills of the Cascades near the town of Mount Angel. The site shares the same soil profile and clonal selection of Chardonnay as our own Seven Springs Vineyard and is farmed following the same guidelines under the LIVE certification. The wine was made following our winemaking practices, in the traditional Burgundian style, with long gentle pressing of the whole clusters. We had a light settling of the juice before it was transferred to barrel for spontaneous indigenous fermentation. There were a few gentle stirrings of the lees during the barrel aging and the wine underwent 100% natural malolactic fermentation. It was fermented and aged in French oak barrels for 11 months with 15% new oak, then bottled unfiltered on August 26, 2011.

WINEMAKER NOTES
Beautiful deep garnet in color, the nose is filled with bright cherry aromas with floral notes and undertones of earthy forest floor. The palate is broad with lush, with a slightly chalky texture, yet elegant and precise with sustained fruit flavors amongst fine and textured tannins. The wine finishes elegantly in harmonious fashion.

 

VINIFICATION
The grapes for our Eola-Amity Hills Pinot Noir are predominantly from the Eola Springs Vineyard – the fruit from these old vines complements our own new plantings at Seven Springs Vineyard to create a beautiful representation of our beloved AVA. Both vineyards showcase the famous red, volcanic soils that the region is famous for and are farmed by sustainable and organic practices, respectively, to emphasize stewardship of the land. The grapes were hand-picked, hand-sorted, de-stemmed and began to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermenters.   Gentle punch-downs were performed twice daily throughout fermentation to help soften the extraction of the tannins.   Aging occurred in once-filled and neutral French oak barrels for 14 months. Our Eola-Amity Hills Pinot Noir was Estate-bottled unfined on March 5th, 2013.

WINEMAKER NOTES
Deep, brilliant garnet in color, the nose is voluptuous and broad showing red and black fruit at first and then opening into floral notes of rose and lavender with hints of cardamon and dried boletus. The palate is seamless with deep fruit flavors of blueberry and sour cherry cobbler, hints of rosemary and a very fine texture throughout.  The finish is precise and direct, sustained by mineral notes and lingering fruit flavors, in the classic Seven Springs Vineyard style.

 

VINIFICATION
Our 2011 Seven Springs Pinot Noir is a representation of the vineyard in its entirety – from every diverse corner of our magical site.  The wine is primarily produced from old-vine, own-rooted Pommard clones and upper sections of 777, 114 & 115 clones. The grapes were hand-picked, hand-sorted, de-stemmed and began to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermenters. Gentle punch-downs were performed twice daily throughout fermentation to help soften the extraction of tannins. The wine was barrel-aged in French oak (30% new) for 16 months. Our Seven Springs Pinot Noir was bottled unfined on April 14, 2013.

WINEMAKER NOTES
Brilliant pale-gold in color with an edge of silver, the complex aromas fill the glass with citrus fruit, white peaches, and floral notes intertwined with aromas of biscuits.  The smooth attack broadens nicely, and fully, on the palate with great texture, complexity, and mineral notes that complement the honeysuckle and citrus flavors.  The long finish is sustained by a great mineral balance that makes your mouth water…and demands another glass.

 

VINIFICATION
Our 2011 La Source Chardonnay comes from old-vine Dijon clones, planted in 1995 to the iron-rich, volcanic soils that make Seven Springs so successful. The wine was made in the traditional Burgundian style – long, gentle pressing of whole clusters. The golden juice had a light settling just before it was transferred to barrel for its spontaneous indigenous fermentation; we gently stirred the lees during the aging in French oak. The wine was aged in barrel for 11 months in 25% new oak, then further aged in tank – on lees – for another five months before we bottled on March 4, 2013.

WINEMAKER NOTES
Clear ruby-red with tones of purple, the elegant nose dances between fruit aromas of wild berries and fragrant floral layers of lavender, exotic spice with herbaceous undertones of rosemary and tarragon. The complex aromas complement one another and take a few moments to identify. The palate has a fine texture of soft tannins with a purity of flavors and a vibrant core – seamless and elegant with bright cherry and a crushed rock character.  The wine has wonderful balance and suppleness that sustain the minerality on the long finish.

 

VINIFICATION
Our 2011 La Source Pinot Noir is an expression of both the rocky and shallow soils that exist at Seven Springs.  These areas are comprised of a nice blend of old vines and new that are farmed organically & biodynamically.  The grapes were hand-picked, hand-sorted, de-stemmed and began to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermenters. Gentle punch-downs were performed twice daily throughout the fermentation helped the soft extraction of the tannins.  The wine was then aged in French oak barrels (30% new) for 16 months. Our La Source Pinot Noir was bottled unfined on April 15, 2013.
