WINEMAKER NOTES
Beautiful & deep in color with a purple edge, the nose is broad and open with candied red and black fruit aromas reminiscent of fresh blackberry & huckleberry crumble.  As the nose opens up, it defines and refines itself towards red currents, earthy and lavender notes sprinkled with exotic cardamom.  On the palate, the smooth attack is lush and lends itself to a core of juicy red and black fruit, complementing the dry herbs and violet notes.  The palate shows great weight with coating and refined textures that linger on the elegant and round finish.  

 

VINIFICATION
Our Willamette Valley Pinot Noir is predominantly from the Yamhill-Carlton AVA with certified organic fruit from the Lemelson Vineyards; and from the Eola-Amity Hills AVA with fruit from the old vines of Eola Springs Vineyard.  All the vineyard sources were carefully selected for their stewardship of the land and sound farming practices, as well as showcasing the typical red volcanic soils that the Willamette Valley is so famous for.  The grapes were hand sorted, de-stemmed and started to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermentors.   Gentle punch down twice per day throughout the fermentation helped the soft extraction of the tannins.   Aging occurred in once filled and neutral French oak barrels to preserve the elegance of the wine.   Our Willamette Valley Pinot Noir was estate bottled the week of August 26th, 2013 on fruit days of the biodynamic calendar.

WINEMAKER NOTES
Beautiful deep garnet in color, the nose is filled with bright cherry aromas with floral notes and undertones of earthy forest floor. The palate is broad with lush, with a slightly chalky texture, yet elegant and precise with sustained fruit flavors amongst fine and textured tannins. The wine finishes elegantly in harmonious fashion.

 

VINIFICATION
The grapes for our Eola-Amity Hills Pinot Noir are predominantly from the Eola Springs Vineyard – the fruit from these old vines complements our own new plantings at Seven Springs Vineyard to create a beautiful representation of our beloved AVA. Both vineyards showcase the famous red, volcanic soils that the region is famous for and are farmed by sustainable and organic practices, respectively, to emphasize stewardship of the land. The grapes were hand-picked, hand-sorted, de-stemmed and began to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermenters.   Gentle punch-downs were performed twice daily throughout fermentation to help soften the extraction of the tannins.   Aging occurred in once-filled and neutral French oak barrels for 14 months. Our Eola-Amity Hills Pinot Noir was Estate-bottled unfined on March 5th, 2013.

Vinification

Our Eola-Amity Hills Pinot Noir comes predominantly from the Eola Springs Vineyard – the fruit of these old vines complement our own new plantings from Seven Springs Vineyard to create an elegant representation of our beloved AVA. Both vineyards favor sustainable and organic practices, respectively, with sound farming and great stewardship of the land. The grapes were hand-picked and hand-sorted, de-stemmed and started to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermentors. Gentle punch downs twice per day throughout the fermentation helped the soft extraction of the tannins. Aging occurred in once filled and neutral French oak barrels to preserve the elegance of the wine for 14 months. Our Eola-Amity Hills Pinot Noir was estate bottled on June 24th, 2014.

Winemaker Notes

Red, velvety and rich with dark purple in color and ruby edges. The nose shows baking spice, anise, dark cherry cola, fresh blackberry and ripe strawberries. On the palate, there is a robust, silky attack which shows a generous amount of brambleberry and spice. The tannins focus as the wine finishes with a slightly mineral and balanced structure giving the wine an unmistakably long finish

Vinification

Our 2012 Seven Springs Estate Chadonnay comes from a newly planted, three-acre block that was developed in 2008. The new planting has been farmed organically & biodynamically from the beginning. We chose a slightly tighter planting density and created our own “bouquet “ of clones through that field. The wine was made in the traditional Burgundian style, with a long gentle pressing of the whole clusters and a light settling of the golden juice just before it was transferred to barrel for its spontaneous indigenous fermentation. Our Seven Springs Estate Chardonnay was fermented and aged in barrels for 11 months with 20% new oak, then further aged in tank for another five months, on lees, before it was bottled on May 16th, 2014.

Winemaker notes

This wine is a pale golden yellow in color. The nose is packed with lemon zest, pear, and quince, with hints of toasted sesame seeds and melon. The rich yet gentle entry on the palate is complemented by a citrusy, supple creaminess. The essence of dried pineapple and a sustained lemony fruit core finishes with a balanced acidity and soft minerality.

WINEMAKER NOTES
Deep, brilliant garnet in color, the nose is voluptuous and broad showing red and black fruit at first and then opening into floral notes of rose and lavender with hints of cardamon and dried boletus. The palate is seamless with deep fruit flavors of blueberry and sour cherry cobbler, hints of rosemary and a very fine texture throughout.  The finish is precise and direct, sustained by mineral notes and lingering fruit flavors, in the classic Seven Springs Vineyard style.

 

VINIFICATION
Our 2011 Seven Springs Pinot Noir is a representation of the vineyard in its entirety – from every diverse corner of our magical site.  The wine is primarily produced from old-vine, own-rooted Pommard clones and upper sections of 777, 114 & 115 clones. The grapes were hand-picked, hand-sorted, de-stemmed and began to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermenters. Gentle punch-downs were performed twice daily throughout fermentation to help soften the extraction of tannins. The wine was barrel-aged in French oak (30% new) for 16 months. Our Seven Springs Pinot Noir was bottled unfined on April 14, 2013.

Our Seven Spring’s Estate Pinot Noir is a representation of Seven Springs Vineyard, in its entirety. Grapes are sourced from every diverse corner of this magical site, including our old vine, own-rooted Pommard clone. The grapes were hand-picked, hand-sorted, de-stemmed and began to ferment naturally after a 4-5 day cold soak in our open top oak and concrete fermenters. Twice daily, gentle punch-downs throughout the fermentation helped the soft extraction of the tannins. Aging occurred in 30% new, French oak barrels for 16 months to preserve the elegance of the wine. Our Seven Springs Estate Pinot Noir was bottled on June 23rd, 2014.

Winemaker notes

This wine is a deep garnet in color with a ruby edge. The nose is dominated with freshly picked blackberries, toasted almonds, baking spice and hints of citrus. The palate is pleasantly balanced, shows soft tannins and notes of freshly made grenadine. The finish is endless and expresses beautiful minerality, a lingering acidity, and perseverant fruit that all undeniably and characteristically come from the Seven Springs Estate.
