2016 Summum Chardonnay

Summum continues to offer itself as the finest wine from Seven Springs and the standard-bearer for Oregon Chardonnay. Sourced from just 14 vine rows threading the spine of the vineyard, the 2016 Summum is vibrant and expressive. The grapes were gently pressed, fermented and aged in 100% new Stockinger punchones, undergoing spontaneous and indigenous fermentation. The wine was raised in puncheon for 12 months and finished in tank before bottling. 


2016 La Source Pinot Noir

One of Oregon's greatest sites for Pinot Noir, La Source comes from the summit of Seven Springs. Rocky soils and daily wind challenge the vines. These adverse conditions result in our very best wine at Evening Land.


2016 La Source Chardonnay

Sourced from the old-vine Dijon clones in the lower half of the vineyard, La Source Chardonnay speaks of our volcanic soils and the sunny growing season of 2016. The grapes were gently pressed into new Stockinger puncheons (500L) for spontaneous and indigenous fermentation. The wine was raised sur lie in puncheon for 12 months before being racked to tank. After a light fining, the wine was bottled without filtering. 


2016 Seven Springs Pinot Noir

The 2016 Seven Springs Pinot Noir comes from our oldest own-rooted Pinot Noir vines, planted in 1984. These 31-year-old vines are harvested by hand, the grapes hand sorted, and roughly 65% of the fruit was destemmed. Gentle punchdowns were employed throughout the naturally occuring fermentation, encouraging a soft extraction of tannins. The wine was aged in 20% new French oak for 12 months.


2016 Seven Springs Chardonnay

Our Estate Chardonnay comes from a unique block in the southernmost corner of Seven Springs. The grapes were whole cluster pressed into to once-used French barriques and Stockinger puncheons (500L) for fermentation. The wine remained in barrel for 12 months before being racked to tank and was lightly fined before bottling.


2017 Seven Springs Vineyard, Gamay Noir

We’re proud to farm some of the oldest Gamay Noir vines in North America. Our 2 plantings of Gamay sit at the base of Seven Springs at 350 feet in elevation. One acre of old vines, planted on their own roots in 1983, lends spice and savoriness, while two acres of Gamay planted in 2003 contribute exuberant aromatics and a lively texture.
